Spring (dioic pepper)
Due to its strong aroma and preservative action, allspice became one of the most popular spices in the late Middle Ages.. The tradition in Europe to season game with allspice dates back to this era, veal, different fish. In Bulgarian cuisine it is used for soups, pickles and marinades. In ethno-kitchens today it is part of sauces, sausages, ketchup, shunki, pastries and teas. Allspice is the main ingredient in the Caribbean spice "jerk".
